Jimmies
Jimmies are indisputably the father of sprinkles. These rods come in a variety of lengths, colors, and textures. Today, jimmies are available in dozens of individual colors, fun mixes, and metallic and shimmery sheens. Their waxy coating prevents colors from bleeding, making them a popular choice for sugar cookies, cakes, cupcakes, and ice cream sprinkles. Throw some into your cake batter for a quick confetti cake (funfetti cake). These are the classic birthday cake sprinkle.
Nonpareils
Named for their “non peril” meaning “without equal”, these versatile tiny balls come in a range of colors and finishes (metallic and shimmer). We like to use these dainty sprinkles on smaller projects like cake pops, spritz cookies, and dipped pretzels when a little color on a small treat has a big impact. Unlike jimmies, colored nonpareils can bleed and leech their color. Due to this, they aren't the best choice for adding to wet applications, like cake batter and soft cookie dough.
Sanding Sugar
Sanding sugar, also known as decorating sugar, comes in a variety of colors. Sanding sugar is slightly coarser than traditional granulated sugar and has more sparkle. It has a light crunchy texture and is perfect for decorating cakes, cupcakes, frosted sugar cookies, and other baked goods.
Coarse Sugar
Also known as sugar crystals, these large-grained sugar pieces add a beautiful sparkle to your baked goods. They come in a variety of colors, and some even have a pearl finish to add shimmer and glamour to your treats.
Shaped Sprinkles
You'll find two types of shaped sprinkles, quins (also known as edible sequins and confetti) and candy sprinkles. Quins are flat, simple cut-out shapes that add color and a touch of crunch. Quins are made from colored sugar dough and their colors do not bleed. Shaped candy sprinkles are thicker pieces with impressive fine, embossed details. Candy sprinkles have a hard crunch like Runts and Sweet Tarts. Since their outside shells are dyed, their colors can bleed when wet.

Metallic Dragees
Onto the most controversial sprinkle of them all! Metallic dragees! Metallic dragees, pronounced "drah-jays", are hard sugar pieces coated in a non-edible metallic finish. These are the sprinkles with the most brilliant shine. Unfortunately, these beautiful sprinkles are non-edible. In fact, they are not even allowed to be sold or shipped to California!
Our most common question is, "why even carry 'em if we can't eat 'em?". These dragees are simply gorgeous on decorative pieces that will be removed before serving or items not eaten. For example, we use dragees on gingerbread houses, in the center of gum paste flowers, and on display cakes. Do you have a customer who really wants the metallic design on a tiered cake? We recommend the tier embellished with dragees to be a
styrofoam dummy underneath, while the other tiers are real. This way the customer gets the desired look without having to remove all the tiny dragees or risking guests eating the metallic dragees.
