With its creamy dark chocolate, refreshing mint flavor, and the satisfying crunch of Mint Oreos, this bark is sure to become a favorite. It reminds us of Girl Scout Thin Mint Cookies! Yum!
We've used dark chocolate candy melts in this recipe for a delicious, easy-to-make recipe. If using real dark chocolate (ingredient list will list cocoa butter and/or cocoa liquor), then the chocolate should be tempered, or the bark will remain tacky or have streaks throughout. Instructions
Lay out a large sheet of parchment paper onto the counter. If the dark chocolate is in block form, chop the chocolate into uniform pieces. Place the dark chocolate candy wafers or chopped chocolate into a microwave-safe bowl.
Melt the chocolate using 20 second intervals, stirring in between to ensure the chocolate melts evenly and doesn’t scorch. Continue melting until the chocolate is fluid.
Immediately add the peppermint flavor. Stir until incorporated. Add the Oreo cookie pieces
Use a spatula and spread the bark as thin as possible on the parchment paper.
When the bark is just set, score using a pastry wheel, or allow to set up completely at room temperature before breaking into pieces.
Once set you can package the mint Oreo candy into into
candy boxes for gift giving.
