To start, decorate the rim of your glass mugs. We like to use two different methods for decorating drink glasses and mugs: piping gel method and chocolate drip method.
For the first method, brush a thick layer of piping gel onto the rim of the glass.
Pour one of the sprinkle mixes onto a plate and rotate the rim of the glass into the sprinkles until all of the piping gel is covered in sprinkle mix. For this recipe we used a sprinkle mix that came with unicorn heads in the mix.
Because the unicorn pieces are heavier than the regular sprinkle pieces, they will not stick well if dipping the glass into the sprinkles. To get them to stick and for a more uniform look, put some of the piping gel into a piping bag. Pipe small dots onto the outside rim of the cup on top of the sprinkle mix where you want to place the larger sprinkle pieces. Gently place the unicorn head sprinkles onto the cup where the extra piping gel was placed.
For the next method, melt white chocolate candy melts in a piping bag using 15 second intervals in the microwave. Knead the bag in between melting times. When the chocolate is completely melted, add a couple of drops of purple oil based food coloring. Knead the bag until all of the food coloring is completely mixed and the chocolate is a light purple color with no streaks. Cut a small hole on the tip of the piping bag and pipe a thick layer of chocolate on the rim of the glass.
Pick the cup up and tap the bottom of the cup onto the palm of your hand, this will make the chocolate drip down around the cup.
Quickly add a sprinkle mix of your choice while the chocolate is still tacky. Don’t wait too long, as the chocolate will set up and sprinkles will not stick to the chocolate.
Now, print unicorn eyes onto a piece of printer paper.
It is important to print the eyes in a size that matches the size of the layons that are going to be used to make the unicorn face.
Place the paper on a flat clean table or counter with a parchment sheet on top. Smooth the parchment so there are no bubbles and you can clearly see the image through the paper.
Melt black melting wafers in a piping bag using 15 second intervals. Once the chocolate is completely melted, cut a small hole on the tip of the piping bag.
Using light pressure, pipe and trace the lines of the unicorn eye pictures. Once you have piped the eyes, you can move the parchment paper up and continue to trace more eyes until you get the look you are going for.
It is important to make extra as they are fragile and easily break when removed from the parchment paper. Set aside to allow the chocolate to set up and save for later.
Next, measure 4 cups of milk and 1 cup of white chocolate candy melts into a sauce pan.
Add 2 tablespoons of cotton candy emulsion for flavoring.
Heat the mixture on medium low heat for 10-12 minutes. Stir continuously to ensure none of the chocolate burns to the bottom of the pan.
Once the mixture is completely melted together and to a temperature of your liking, remove from the heat and add pink food coloring until you get the desired color.
Next, pour the mixture directly into the cups or into a container with a spout to avoid any spills.
When pouring the milk mixture into the sprinkle lined cups, leave an inch of room at the top of the cup for the whipped icing to settle without spillage.
When the glasses are filled with the hot chocolate mixture, it is time to decorate! Make our easy stabilized whipped icing and fill a piping bag attached with a 1M tip.
Starting on the outer edge of the cup as to attach the icing, pipe around the edge of the cup in a circular motion continuing around until the entire top of the cup is filled with icing.
Using tweezers, place the unicorn horn and ear layons on top of the icing.
Carefully peel the chocolate eyes off of the parchment paper and place on the whipped icing. Use tweezers for this step as well as to not melt the chocolate in your fingers when handling.
