Candy Center:
Microwave the heavy whipping cream and corn syrup for 40 seconds. Stir, then heat for another 40 seconds. Pour the heated mixture over the real white chocolate and let sit for 2 minutes to begin melting the chocolate. Use a whisk to blend the ingredients together. If there are lumps, microwave for 20 seconds and stir. Repeat until smooth and shiny. Add the vanilla-infused chai spice blend to the ganache. Set aside to cool.
Chocolate Shells:
Melt 1 lb of white candy coating in the microwave using 30-second intervals, stirring between each interval. Transfer the melted chocolate to a squeeze bottle. Fill each cavity of the chocolate mold with the melted chocolate. Tap the mold on the work surface to smooth and release air bubbles. Invert the mold onto a parchment-lined baking sheet to remove excess chocolate. Use a bench scraper to scrape excess chocolate and create clean edges. Place the mold in the refrigerator for 5 minutes to harden the shells.
Assemble Truffles:
Fill a tipless bag with the cooled candy center. Once the chocolate shells have set, fill each cavity with the candy center, leaving room to seal in the center with additional melted hocolate. After sealing the center, gently tap the mold to release any air bubbles, then place it in the refrigerator to set up for 10-15 minutes. Invert the mold onto the work surface and gently tap to release the candies from the mold.
To Decorate:
