To start prepare cookies using our green sugar cookie mix- we made the drop version of the recipe. Cool cookies completely before decorating. Place them evenly spaced on parchment paper for easy clean up. Whip pre-made buttercream on low speed for 10-15 minutes to remove any air pockets and to create a more fluffy icing. Once mixed and fluffy, transfer icing to a disposal pastry bag- no tip needed! Make sure you have your sprinkle mix or toppings ready to go, and transfer it into a small bowl.
Cut the very tip of the piping bag to make a medium-sized opening. Flip over half of your cookies- these are going to be the cookies we pipe buttercream onto. Starting at the edge, pipe on an even layer of buttercream onto your cookie. Place another cookie on top immediately after frosting. Once sandwiched, roll into sprinkles or topping of your choice. Work with 1-2 cookie sandwiches at a time to ensure the toppings will stick to your freshly piped icing. Continue until all cookie sandwiches are complete. Store in an airtight container in the fridge for up to two weeks for optimal freshness.
