St. Patrick's Rice Krispie Treats Recipe

These Chocolate-Dipped St. Patrick's Day Rice Krispie Treats are a delightful combination of gooey marshmallow goodness and rich chocolate. Whether you're celebrating with family or friends, these festive treats are sure to bring smiles to faces and add a sweet touch to your St. Patrick's Day festivities. Ingredients

  • White Candy Coating
  • Rice Crispy Treats
  • Green Oil Based Food Coloring or Green Candy Melts
  • Festive Sprinkles of your choice

Instructions

Start by melting white candy coating in a microwave safe bowl in 30 second intervals until the chocolate is mostly melted. Be sure to mix the chocolate in between each interval. Once the candy coating is melted and thoroughly mixed, set it aside for the next step. Unwrap pre-made rice krispie treats or create your own. Use a three to four inch rectangle cookie cutter to cut out the rice krispie pops. Be sure to cut them out as close as possible to get the most out of your sheet of rice krispies.
Once all of the pops are cut out, dip one end of the popsicle stick into the melted coating, then push into the rice krispie pop. Line a baking sheet with parchment paper. This will make for easy cleanup later. Dip the top half of each rice krispie pop into the candy coating and place on the parchment. If the candy coating is too thick, add 2-4 tablespoons of paramount crystals, then microwave for 30 seconds and stir well. When dipping the treats, scrape the bottom side and top of the pop on the side of the bowl to remove excess chocolate. This also prevents chocolate from pooling around the pop as it sets up.
Once all of the pops have been dipped, fill a small tipless bag with some of the white chocolate coating and set aside. Add a half cup of green candy coating to the remaining white coating, stir, then microwave for 30 seconds to one minute. Be sure to stir the chocolate well so the color is even throughout. Fill a small tipless bag with this melted, light green coating and a final tipless bag with the dark green coating.
Now that the chocolate on the rice krispie pop is set, remove them from the parchment and arrange so that they have enough space between them for drizzling. Drizzle one rice krispie pop with two colors of chocolate, then immediately add sprinkle mix. Repeat this for all rice krispie pops. Finish these off by adding some white edible glitter to each pop.
