Prepare the Mold: Wipe the cakesicle mold with a few drops of clear grain alcohol and a paper towel to remove any particles and add shine to the chocolate.
Coat with White Chocolate: Melt white candy coating in the microwave and transfer it into a squeeze bottle. Fill each cavity of the cakesicle mold with a bit of chocolate, using an angled spatula to coat the sides evenly. Tap the mold gently on the work surface to release air bubbles. Use a popsicle stick to remove excess chocolate from the stick opening.
Repeat with Blue Chocolate: Melt blue candy coating and repeat the coating process as with the white chocolate. Refrigerate the mold for 10 minutes until the coating is set.
Prepare the Filling: Mix a little buttercream with crumbled cake until it forms a cohesive ball. Fill the cavities of the mold with the cake mixture, leaving space to seal in the cake with chocolate. Insert popsicle sticks ¾ of the way into the cake.
Seal with Chocolate: Apply more melted chocolate to seal the cavities and use an angled spatula to smooth out any rough edges. Refrigerate for 15 minutes until set.
Remove from Mold: Once set, gently release the cakesicles from the mold by pushing the sides and back. Allow them to come to room temperature.
Decorate: Drizzle melted chocolate from tipless bags onto the cakesicles in complementary colors. Immediately add sprinkles and sugar layons for a decorative touch.
