Instructions
1. Place Peter’s Caramel in a microwave safe container or sauce pan & slowly melt until fluid. Once melted, stir in pumpkin spice emulsion until throughly combined. Set this mixture aside to firm back up.
2. Line turtle mold with melted orange coating. Let this set up at room temperature. Cut a piece of the pumpkin caramel to fill 1/2 of the lined mold. Shape & press into the mold. Press pecans on top of the caramel, enough to nearly reach the brim.
3. Cover the caramel & pecans with the melted orange coating. Gently tap to remove any air bubbles & place in the freezer.
4. When the mold is cloudy & the candy feels cold, invert the mold and the candy will drop from the mold. Use the melted cocoa lite coating, in a tipless bag, to pipe a swirl on the back of the turtle.
