St. Patrick's Day Pot of Gold Cupcakes

Ingredients

  • Cupcakes or Cupcake Dummies
  • Rolo Candy
  • Gold Sequin Candy
  • Piping Gel
  • Buttercreeam
  • Blue Gel Food Coloring
  • Piping Tip #10 and #806
  • Sour Candy Strip

Instructions

Place premade cupcakes or cupcake dummies on a parchment lined baking sheet. Start by unwrapping Rolo candy and pipe a dab of piping gel on the bottom of the Rolo candy, then dip the Rolo into the gold sequin sprinkles. Add more piping gel and sprinkles as needed.
Pipe a swirl onto the cupcake with blue buttercream using the tip #806. Then, use white buttercream to pipe small dots to look like clouds on opposite sides of the cupcake with tip #10. When completed, cut sour candy strips in half. Place the two ends of the sour candy into the center of each cloud cluster, fill in the clouds as needed. Place the Rolo pot of gold next to the rainbow on the top of the cupcake. Repeat until all cupcakes are completed.
