Making the Candy Filling
Mix together the dry fondant mix, the heavy cream, & melted butter.
Mix in the strawberry icing fruit, starting off with only 1 tablespoon. If a stronger flavor is desired, add the 2nd tablespoon of icing fruit.
If the mixture seems too thin, add a small amount of powdered sugar.
Set this mixture to the side & begin to work on making your chocolate bunny shells.
Making the Chocolate Shells
Pour pink candy melts into a tipless bag & microwave in 20-30 second intervals until the coating is completely melted. Make sure to knead the bag in between each interval to ensure the chocolate does not burn.
Seperate all pieces of your 3-part chocolate mold. There should be a top & bottom piece of the mold along with 4 clear inserts that fit inside of each cavity.
Identify the bottom portion of the mold- there should be a super faint line on each cavity which tells you how far up you need to fill each cavity with melted chocolate.
Snip the end off of the tipless bag & fill the cavity up to the faint line with chocoalte. Make sure to not overfill the mold as the space between the bunny ears will get filled with chocolate.
Press the clear insert into place & press down to ensure it is fully sumberged in the melted chocolate.
Repeat these steps until all 4 cavities have been filled. Put the top piece of the mold into place & freeze for 15-20 minutes.
After 15-20 minutes, remove the top piece of the mold & all 4 of the clear inserts.
You are now left with your chocolate shells!
Filling the Chocolate Shells
Press the strawberry candy center you made previously into each of the bunny shells. Only add a small amount of filling to the ears, or none at all.
Once all 4 bunnies have been filled with the strawberry center, seal each bunny with melted pink candy melts- you will need to re-melt the chocolate in the tipless bag used previously. Microwave in 10 second interavals, kneading in between each, until it is fully melted.
Once all 4 bunnies have been sealed, stick the mold into the freezer for 10 minutes to harden the backs of the bunnies.
Decorating the Bunnies
After 10 minutes, carefully remove the bunnies from the mold.
Coat each bunny in clear piping gel using a paint brush.
Roll each piping-gel coated bunny into a dish full of pink sanding sugar.
At this point, the bunny bums are finished!
Pour a small amount of milk or dark candy melts into a tipless bag. Microwave in 20-30 second intervals, kneading in between each interval, until the chocolate is completely melted.
Snip a small opening off the end of the bag & pipe 3 small dots on each bunny face- 2 for the eyes and 1 for the nose.
