Roll fondant to desired thickness and cover cakes. Prepare cakes for stacking and put on cake board or drum.
Roll white fondant very thin and cut dots for the dice; apply to cake using piping gel. Cut 1" circles then brush with luster dust mixed with grain alcohol or lemon oil to make gold coins. Cut 3" x 2" rectangles and place on bottom cake. Cut letters from red fondant and place on rectangles using piping gel. Mold fruit and place on rectangles or cut out the white fondant to make fruit recessed in fondant; apply all with piping gel. Cut 1 1/2" squares from the red fondant for the betting buttons and cut a 2 1/4" square from the green fondant for the spin button; apply all to cake with piping gel. Mold the name using the letter mold and candy coating. Cut a dark green piece of fondant 5" x 1 3/4", apply to cake with gel then lay name across green piece with piping gel. Use mini circle to cut yellow fondant and place around the outside edge of green piece using piping gel. Cut heart, spade, club and diamond from black and red fondant and place around green piece. Roll yellow, green, blue and red fondant about 1/8" thick and cut 1 1/2" circles to resemble poker chips. Pipe names of betting buttons on to the front use pastry bag fitted with small open tip.
