Instructions

Create the Coral Reef:
Pipe the Reef: On a sheet of parchment paper, use melted candy coating to pipe whimsical coral reef shapes. Sprinkle with shimmer rose gold sugar crystals while the candy is still wet.
Set the Reef: Allow the candy reef to set and harden completely.
Add Seahorses: Once the reef is firm, use a little melted chocolate to attach edible candy seahorses to the reef. Let the chocolate set.
Peel from Paper: Gently peel the hardened coral reef from the parchment paper.
Prepare the Seashells:
Paint Molds: Use candy writers to paint details into your seashell candy molds.
Fill Molds: Pour melted candy coating into the molds, covering the painted details.
Release Air Bubbles: Tap the molds gently on the work surface to release any air bubbles.
Set the Candies: Place the molds in the freezer for 10-15 minutes. The candy will be ready when the mold looks cloudy, and the pieces release easily.
Finish Seashells: Allow the candy pieces to come to room temperature, then brush with luster dust for a pearly finish.
Decorate the Cupcakes:
Pipe Buttercream: Fill a piping bag with blue-green buttercream and fit it with a 1M piping tip. Pipe stars and wave patterns onto each cupcake to resemble water.
Add Decorations: Carefully place the coral reef, candy seashells, some gold sugar crystals for sand and edible sea creatures on top of the buttercream. Sprinkle with candy pearls. Finish with a light squirt of jewel dust for added sparkle.
