Begin by melting white candy coating in a microwave-safe bowl, using 30-second intervals and stirring in between each time until smooth. Transfer the melted chocolate into a squeeze bottle for easy application.
Fill each cavity of the sandwich candy mold halfway with the melted chocolate. Then, gently place a sandwich cookie in each mold and fill the remaining space with the melted white chocolate. Tap the mold lightly on the countertop to release any air bubbles.
Place the filled mold in the freezer for approximately 20 minutes or until the chocolate has set and the mold appears cloudy. This indicates that the cookies are ready to be removed from the mold.
Once set, carefully invert the mold onto a parchment-lined surface and tap gently to release the cookies. Allow the cookies to come to room temperature before proceeding to the next step.
Drizzle each molded sandwich cookie with additional melted chocolate coating, then immediately sprinkle with bright shimmer nonpareils for added decoration and texture.
To create the fox decoration, take an orange candy melt and place it flat side up. Cut a micro marshmallow diagonally in half, then dip the sticky centers in orange edible glitter to create the fox's ears.
Using an orange candy writer, attach candy eyes, jimmie whiskers, a black sugar pearl nose, and the marshmallow ears to the orange candy melt to form the fox's face.
Once the fox face is assembled, carefully attach it to the molded sandwich cookie, pressing gently to ensure it adheres securely. Optionally, add additional edible candies to embellish the cookie further. Add some jewel dust for added sparkle.
