Instructions
Prepare Candy Coating:
Place candy coating in a microwave-safe bowl.
Microwave in 30-second intervals, stirring in between until completely melted.
Transfer melted chocolate into a tipless bag or squeeze bottle.
Fill the Mold:
Fill each cavity of the sandwich cookie mold halfway with melted yellow chocolate.
Tap the mold gently to release air bubbles.
Place a sandwich cookie into each cavity, pressing lightly into the chocolate without it showing on top.
Fill the mold with more chocolate to cover the cookies completely.
Tap again to settle chocolate and remove excess with an offset spatula.
Chilling:
Refrigerate mold for about 20 minutes until chocolate sets.
Removing from Mold:
Once firm and mold appears cloudy, remove from refrigerator.
Invert mold onto parchment paper to release chocolate-covered cookies.
Allow cookies to reach room temperature before decorating.
Decoration:
Melt candy coating as before and place in a tipless piping bag.
Drizzle each chocolate sandwich cookie with melted candy coating.
Immediately add sprinkles or sugar decorations before chocolate sets.
Serve or Store:
Once decorated, let cookies set completely at room temperature.
