Mini Buttercream Cookie Sandwich Bites
Use this simple twist on the basic sugar cookie to elevate your dessert table. This universal recipe is easily altered to suit allergies or flavor preferences. Substitute with a chocolate sugar cookie recipe or even a dairy free buttercream icing to accommodate everyones sweet tooth!
Ingredients
- 1 inch pre-made Circle Sugar Cookies
- Sprinkle Mix of your choice
- Piping Gel
- Buttercream
- Edible Glitter
Instructions
Start by cutting and baking one inch circles with your favorite sugar cookie dough. Then, prepare your desired sprinkle mix in a shallow container. For this recipe we used silver sanding sugar and sugar crystals. Using a small paint brush apply clear piping gel to the sides of the sugar cookies. Make sure to apply a thin even layer of the gel to ensure the sprinkles stick properly. After applying the clear piping gel, roll the sides of the cookie in your desired sprinkle mix making sure the sprinkles have full coverage onto the edges of the cookie. Repeat these steps until all of the sugar cookies edges are coated.
Next, fit a piping bag with star tip number 21 and fill with white buttercream. Pipe a single swirl of buttercream on a cookie and stack another cookie on top of this buttercream. Once another cookie is stacked on top, pipe a full swirl of buttercream, then add your sprinkle mix. To finish the cookie, spray with white jewel dust if desired. Repeat these steps until all of the cookies are decorated and enjoy!
